Many people ask me if you can fry with olive oil. They hear that olive oil is only for salad, or that it burns too fast. This is something I hear often, especially from people outside Greece. The truth is simple. You can fry with olive oil when the olive oil is good quality. High-quality extra virgin olive oil is stable, fresh, and rich in natural antioxidants. These elements protect the oil when it is heated. When olive oil starts smoking very fast or smells burnt, it is usually not because of frying, but because the oil itself is old, badly made, or refined.

In Greece, olive oil is not a special product we are afraid to use. It is our everyday cooking oil. We use it for vegetables, potatoes, meat, and many warm dishes. This is how I learned to cook, and this is how people around me still cook today. Good olive oil stays calm in the pan. It keeps its structure, its taste, and its character. Heat does not destroy good olive oil easily. On the opposite, heat often shows the real quality of the oil.
